Dark This is a full-bodied wine, is rich and velvety in texture with a refined balance in acid structure and tannins. A sumptuous finish that just keeps on giving.
W I N E M A K I N G
This is an Amarone style wine made from Shiraz grapes. The grapes are hand-picked, just before flavour ripeness, into individual 10kg buckets and then laid out onto separate racks to dry. The drying is carried out in a purpose built, fully insulated shed complete with high intensity air fans to aid the drying process. The length of drying time varies each year and is influenced by a variety of factors including the ripeness of the grape, the ambient heat and humidity and the flavour on tasting. The drying process intensifies the flavours of the grape without losing any of the natural acids present in the grape on picking. The Baumรฉ of the grape is increased during this process by between 0.5 ยฐ and 1.5 ยฐ. After drying the grapes are processed into wine.

Estate-grown shiraz picked and semi-dried on racks in the appassimento method. A deeply coloured, aromatically dense wine that shows plenty of intense plum, prune and dark cherry notes underscored by hints of baking spices, grilled figs, cedar, espresso, panforte, roasting meats and earthy, ferrous tones. Deep and resonant with plush, meaty fruits, a touch of pastis and plenty of powdery tannins and fruit impact. It thunders off into the distance.

"A wine which is of such enormous interest, as well as quality โ an Amarone style from Barossa Shiraz. Handpicking into ten kilo buckets, before the grapes were laid out on racks to dry. It is no shrinking violet, and some may find it all a bit much, but for those who enjoy this style, they will revel in this wine.
Dark maroon. Red cherries, spices, florals, a sweet core of cassis. This is all supported by notes of coffee beans, mocha and chocolate. Ripe and rich, and yet it is finely balanced. Impressive length and soft, cashmere like tannins. This has at least eight to twelve years ahead of it. Delicious. "

Immensely complex and enticing, the wine shows blackberry, vanillin oak, clove and cocoa aromas on the nose, leading to a gorgeously refined palate delivering velvety mouthfeel with beautifully melded tannins. Multi-layered and harmonious with a sumptuous mouthfeel, offering glorious drinking.

The 2021 Gregor Shiraz is silky and opulent, full-bodied and balanced, with masses of luscious dark berry fruit, dark chocolate, scraped vanilla pod, chinotto, blood orange and roast meat. It is bloody and thick and really good. Often, when wines have alcohol this high, the fruit can feel desiccated and dried. Here, not so. The wine is harmonious and fresh and yes, massiveโsureโbut it nails the style with confidence. 15.3% alcohol, sealed under Diam and wax.ย
