Amarone-style Shiraz made from hand-picked grapes placed into 10 kg buckets and rack-dried in a purpose-built, insulated shed with high-intensity air fans. Drying time varies each year depending on grape ripeness, temperature, humidity, and flavour development, gradually concentrating the fruit and increasing Baumé by 0.5°–1.5° while preserving natural acidity. After drying, the grapes are processed into wine and matured in French oak for 18 months, resulting in a rich, concentrated style with depth and complexity.
