A soft and generous mouthfeel, featuring pepper, spice and creamy vanilla with smooth blackberry, raspberry and dark plum flavours. Gentle velvety tannin structure with a lovely savoury finish.

W I N E M A K I N G

This is an Amarone/Appassimento style wine. The grapes are hand-picked and laid onto racks to semi-dry. The length of drying time varies each year and is influenced by the ripeness of the grape, the ambient heat and humidity and the flavour on tasting. The drying process intensifies the flavours whilst maintaining the structure and natural acids of the grape. Wild ferment, open vats, hand plunged daily.

The Hobbsys have done very well indeed here, from the excellent '21 vintage. It's made in the amarone/appassimento style; so semi-drying of the grapes on racks, wild ferment follows. There is often a density and broodiness to such styles. Not so here, as there is some lovely detail to the ripe dark and black plum and berry fruits with shades of spice box, dates, dark and milk chocolate, veal jus, glazed black cherries and earth. It's a lovely drink.

The 2021 Tin Lids Shiraz Aria Secca is an appassimento style Shiraz: the fruit was handpicked and dried on racks prior to fermentation. The bouquet leads with Christmas cake spice, sweet roast beef crust, pan drippings, cinnamon bark, scraped vanilla pod and dark chocolate. In the mouth, the wine is inky black and concentrated, with ground coffee beans, squid ink and graphite. Black as anything. Balanced, despite the style, the mild vintage accounts for much of the freshness in the wine. Very good. 15.3% alcohol, sealed under screw cap.
